VIVAPUR® Alginate for Gelatin Replacement in Cake Fillings
Are you looking for a vegan or vegetarian alternative to gelatin in your desserts or cake fillings?
VIVAPUR® Alginate enables convenient cold preparation and is therefore very simple to use in applications like whipped fruit creams or no-bake cheesecake. A powder blend of dry ingredients can be directly added to cream or milk. After stirring for a few minutes, the filling is ready to be spread onto the cake base and is placed in the fridge to set. The alginate leads to a firm cream texture, similar to gelatin, and provides a clean cut of the cake filling.
