Fill cup containing 200 g RÄUCHERGOLD® BARBECUE SMOKING CHIPS with water (or alternatively wine, beer, whisky diluted with water, or anything else you fancy) up to the blue line, and allow to steep for at least 30 minutes. During this time you should shake the cup repeatedly, so that the water sinks well into the RÄUCHERGOLD® BARBECUE SMOKING CHIPS. Any superfluous liquid remaining should then be drained off.
Heat the grill, and when the right temperature has been reached, spread the RÄUCHERGOLD® BARBECUE SMOKING CHIPS evenly over the coals. Then start barbecuing immediately. With a closed barbecue, the flavour will penetrate the ingredients more effectively. If you have a barbecue without a lid, you can cover the ingredients with a sheet of aluminium foil.
If you have a gas barbecue, after you have steeped the RÄUCHERGOLD® BARBECUE SMOKING CHIPS they should be placed in an aluminium pan without holes. This should then be positioned over the lava stones or heating spiral. You can then add the ingredients you want to barbecue, and grill them until you consider them sufficiently done as described above. Enjoy!

Prepare the ingredients you want to smoke. e.g. fish, meat or sausage. Set up frame for hanging the ingredients. Place charcoal or wood chips in the smoking compartment and kindle.
Do not use any chemical firelighters!
Depending on the size of the furnace and the smoking intensity you are aiming for, moisten ca. 150-200g RÄUCHERGOLD® Smoking Meal. Having reached the desired temperature (40° C for warm smoking, 70-80° C for hot smoking), scatter RÄUCHERGOLD® Smoking Meal evenly over the charcoal.
(Alternatively, scatter moistened RÄUCHERGOLD® Smoking Meal in the smoking pan and place on the coals). Hang your smoking ingredients in the furnace, cabinet or compartment to begin the smoking proper.
Please ensure that the smoking ingredients do not come into contact with one another, to avoid their sticking together, and make sure that the smoking aroma can completely penetrate the ingredients. The cooking time will depend on the temperature, the smoking furnace you are using and the ingredients, and may vary accordingly.
